Carmen
Carmen is a fresh liquid active sourdough which contains naturally produced dextran. This unique sourdough is made from a selected sourdough bacteria, isolated from Panettone madre. Carmen improves softness and volume, gives open crumb structure and enhances moist mouthfeel of bakery products. Carmen is designed for sweet dough applications such as brioches, pains au lait, danish or Panettone.

5-10% on flour weight.
Use after completely defrosted.
Shake well before use.
Reduce half amount of water of Carmen.
Add Carmen when mixing with other ingredients.
